I knew I couldn't be the only person who wanted to do this.

Could you elaborate on what you did for your players? re: "add a couple of bypass caps and a couple of jumpers in the appropriate places".

The wiring diagrams I've seen show a direct connection from the SPDIF to the Sharp/Toshiba optical plugs. No caps, etc. Any downside in doing it this way?

It seems that the DAT folks have been doing this type of thing for quite some time.
