Hi James-

I don't know for sure what the limits are, but here's what I know:

1) I've heard 15m is the top end for optical
2) I've had no problem using 100ft of coaxial in a RG-6 75ohm video cable (very cheap!)

Consumer coaxial connections have a 75 ohm impedance. If you were to try something with CAT-5, you would probably need to terminate and change the source impedances of you equipment to match that of CAT-5 cable (I don't know what impedance it is) to minimize reflections.
